Preparation Strategies for Different Stages
- Raw Meat Mixture Stage
You can season, mix (to develop a springy texture), and shape the meat into firm, raw meatballs 1–2 days in advance.
Coat the raw meatballs lightly with starch, store them in an airtight container in the refrigerator, and simply steam them when ready to eat.
- Par-cooked/Shaping Stage
Deep-fry the meatballs until the surface is golden and set, or steam them until about 70–80% cooked; let them cool before placing them in a freezer bag.
They can be stored in the freezer for 1–2 weeks. No need to thaw before eating; simply steam them again for 15 minutes to cook them through completely.
- Fully Cooked Stage
Let the fully steamed meatballs (and their juices) cool down, then seal and freeze them.
When ready to eat, steam them until heated through and drizzle with a freshly made light starch glaze. They can be served quickly, with a taste and texture very close to freshly made ones.
Key Considerations for Preparation
Do not refrigerate raw meat mixtures for more than 2 days; otherwise, the meat may release moisture and become tough or dry, compromising freshness.
Ensure meatballs stored in the freezer are tightly sealed to prevent flavor transfer, surface dehydration, and the absorption of freezer odors.
When reheating prepped meatballs, the steaming time should be 5–8 minutes longer than for fresh ones to ensure the centers are thoroughly heated and the flavors are evenly distributed.
